In these COVID times everyone should drink healthy soup to recover from post covid weakness. Me & my family drink this healthy soup every day. If you are recovering from COVID apart from healthy soups, you can eat lots of protein rich diet, as its very necessary for your body. You can eat Chickpea Salad ,  Kiwi Salad , Cucumber salad, Healthy Quinoa for breakfast.

Today i am sharing with you recipe of a healthy soup that not only taste's delicious, but also very easy to make at home. You can make this soup anytime. whenever you feel lack of energy or if you are anemic, then drink this soup everyday.


Ingredients:-

Tomato - 4 ( 2 Cups ) 
carrot - 4 ( 2 Cups )
Beetroot - 1 Cup
Onion - 1/2 Cup
Coriander - 1/4 Cup
Ginger - 2 Spoon ( chopped )
Salt - 1/2 Spoon
Black Pepper - 1/4 to 1/2 spoon
Mint Powder - 1/2 Spoon ( optional )
water - 3 Cups

Pinch Of Black pepper & Black salt 
Lemon Juice according to taste

Method:-

1. Wash all vegetables to remove any dirt from them, now Roughly Chop all vegetables, you don't need to peel them unless you really want to, throw all vegetables in a Pressure cooker.
2. Now add salt , pepper & some mint powder. I have used homemade mint powder, so if you don't have mint powder you can use fresh mint leaves.


3. Now take 3 cup of water, pour it in pressure cooker & close the lid.
4. Turn on gas & set pressure cooker over low heat.
5. Pressure Cook vegetables till 3 to 4 whistle.


6. After 4 Whistle's turn off gas , release steam & remove pressure cooker from stove, once all steam is released carefully open Pressure cooker.


7. Now carefully Mash everything, If you want you can grind everything to make a think soup. But I like my Soup this way, so I separate boiled & mashed vegetables from stalk. 


8. Pour hot soup in glass, sprinkle some black salt & black pepper .

9. Now add few drops of lemon juice. And serve hot.
